For the Potato Filling:
2–3 boiled potatoes (medium-sized)
1 green chili (finely chopped)
1 tsp grated ginger
2 tbsp chopped coriander
½ tsp cumin seeds
½ tsp red chili powder
½ tsp turmeric powder
½ tsp garam masala
Salt to taste
Lemon juice or amchur (dry mango powder) – optional
For the Batter:
1 cup besan (gram flour)
¼ tsp turmeric
½ tsp red chili powder
Pinch of hing (asafoetida)
Salt to taste
Water (to make a smooth batter)
A pinch of baking soda (optional, for extra crispiness)
Others:
4–6 slices of bread (white or brown)
Oil for deep frying

1. Make the Filling
Mash the boiled potatoes.
Add all filling ingredients and mix well. Taste and adjust spices.
Optionally, you can sautΓ© this mix for 1–2 minutes for extra flavor.
2. Prepare the Batter
Mix besan, spices, and salt in a bowl.
Add water slowly and whisk to make a lump-free, thick batter.
Add baking soda at the end and mix gently.
3. Assemble
Take bread slices and cut into halves (triangles or rectangles).
Spread the potato filling between two halves like a sandwich.
4. Fry
Heat oil in a kadhai or deep pan.
Dip each stuffed bread piece in the batter, coat it well.
Carefully slide it into hot oil.
Fry till golden brown and crispy on both sides.
Drain on a paper towel.
