For assembling:


10–12 puris (the hollow kind used for pani puri/golgappa)


1 cup boiled and chopped potatoes


1/2 cup boiled moong or white peas (optional)


1/2 cup finely chopped onions


1 cup thick curd (yogurt), whisked


3 tbsp sweet tamarind chutney


3 tbsp green mint-coriander chutney


1 tsp red chili powder


1 tsp roasted cumin powder


1 tsp chaat masala


Salt to taste


Nylon sev (thin, crunchy gram flour noodles)


Fresh coriander leaves (chopped)


Pomegranate seeds (optional)

Prepare the puris:


Gently crack the top center of each puri to make a hole large enough to stuff ingredients.


Fill the puris:


Add a little boiled potato and optionally, some moong/peas into each puri.

Drizzle both tamarind chutney and green chutney (adjust quantity to your taste).
