π³π₯ Restaurant-Style Omelette Curry Recipe
π Ingredients
For the Omelette:
Eggs – 3 to 4
Onion – 1 small (finely chopped)
Green chili – 1 (chopped)
Tomato – 1 small (chopped)
Coriander – a handful (chopped)
Turmeric – ¼ tsp
Red chili powder – ¼ tsp
Salt – to taste
Oil – for frying
For the Curry:
Oil – 2 tbsp
Cumin seeds – ½ tsp
Bay leaf – 1
Onion – 1 large (finely chopped)
Ginger-garlic paste – 1 tbsp
Tomato – 2 medium (pureed or finely chopped)
Turmeric – ½ tsp
Red chili powder – 1 tsp
Coriander powder – 1½ tsp
Garam masala – ½ tsp
Salt – to taste
Water – 1 to 1.5 cups
Fresh cream or coconut milk – 2 tbsp (optional for richness)
Kasuri methi (dried fenugreek) – ½ tsp (crushed)
π₯ Instructions
1. Make the Omelettes:
Beat eggs with onion, green chili, tomato, coriander, turmeric, chili powder, and salt.
Heat a little oil in a nonstick pan.
Pour a portion of the mixture and cook on medium flame till both sides are golden.
Repeat until you use up all the batter (you can make 2–3 thick or thin omelettes).
Cut into squares or triangles and set aside.
2. Make the Curry Base:
In a pan, heat 2 tbsp oil. Add cumin seeds and bay leaf.
Add chopped onions and sautΓ© until golden brown.
Add ginger-garlic paste and cook till raw smell disappears.
Add pureed tomatoes, turmeric, chili powder, coriander powder, and salt.
Cook until oil separates from the masala (around 5–7 mins).
3. Add Water & Simmer:
Add 1 to 1.5 cups water (adjust consistency).
Bring to a boil, then simmer for 5 minutes.
Stir in garam masala, crushed kasuri methi, and cream (if using).
4. Add Omelette Pieces:
Gently slide in the omelette pieces.
Let them soak and simmer in the curry for 3–4 mins on low flame.

Steamed rice, jeera rice, chapati, or butter naan.

For a smoky flavor, you can slightly char the omelette on an open flame before adding.
